Scope of HACCP Analysis
Food Safety and Food Quality Hazards for Purchasing Raw Materials, Receival of Raw Materials, Storage of Raw Materials, Cereal Production, Packaging of Finished Product, Storage of finished packaged product, Despatch and Delivery.
Purpose of HACCP Analysis
To identify all potential food safety hazards, evaluate the hazards and develop preventative and control measures to satisfy consumers’ requirements and food safety legislation.
Product Description & Composition:
Puffed whole grains.
Legal:
All food is to comply with the Australian Food Standards Code, and associated legislation.
Method of Preservation:
Retail packs: Clean, new, sealed plastic bags.
Bulk product: Clean, new, Bulkabags on polythene base and wrapped in shrink-wrap.
Bulk cartons: Clean, plastic bags within fibreboard carton.
Store in dry storage area out of direct sunlight.
Health:
Free from visible disease, spoilage or contamination.
No evidence of temperature abuse such as discolouration, or sweating.
No evidence of tampering. (See Microbial criteria in product specifications).
Packaging (Plastic Materials for Food Contact use must meet Standard AS2070-1999):
125g & 175g heat sealed plastic bag.
2.0kg to 4.0kg Bulk carton containing secured plastic bag.
Storage Conditions:
Dry storage out of direct sunlight.
Distribution Method:
Approved Carrier.
Shelf Life:
12 months following production – the product is Shelf-stable (meaning non-perishable food with a shelf life of many months to years).

Identification:
All boxes and bags have Good Morning Cereals address details, “Best Before” date and/or Batch Code, weight and count (for boxes).

“Ready to eat”.
Intended Use:
Human consumption.
Sensitive Population:
For general human consumption, or where specified special meals to suit dietary needs of individuals.
Variety:
Rice ,millet, spelt, buckwheat, sorghum, corn, kamut and wheat puffs. Available organic or conventional.
Grade:
Only one Grade – for retail and wholesale sales.
Colour, Visual, Sensory:
White to cream in colour with some brown speckles.
Smells fresh and biscuity.
Grain remains whole.
Shape:
Puffed grain without husk present.
Live Pests:
Nil visible live or dead insects or larvae.
Physical Damage/Defects:
Puffs not to show signs of burn.
Husk content to be less than 5%.
Nil whole unpuffed grain present
Chemical Residues:
Not to exceed approved MRL (maximum residue levels) Australian Food Standards Code A12-14.
Storage:
Cool, dry storage out of direct sunlight.
Distribution Method:
Enclosed van or vehicle.
Packaging:
Heat sealed plastic bag or fibreboard cartons lined with plastic bag.
Labelling:
Product name, producers address, nutritional information, Best Before date (one year after production) and/or Batch Number, and weight.
Extraneous Matter:
Nil insects, nil spiders, nil bird or vermin droppings, nil visible dirt.
Contaminants:
Physical: Nil visible foreign objects.
Chemical: Chemical residue in product is less than the Maximum Residue Limits specified in Australian Food Standards Code A12 to A14.
Microbial: Below microbial criteria limits specified below.
Microbiological Criteria:
Finished packaged product – at the time of production and at Best Before Date, each product on a one to two year cycle:
• Faecal Coliforms <100 per gram
• Escherichia Coli < 3 per gram
• Plate Count < 100,000 per gram (10 gram sample to be provided).
Shelf Life:
One year, subject to correct handling and storage conditions – the product is
Shelf-stable (meaning non-perishable food with a shelf life of many months to years).
